Job Title Sous Chef

We are currently recruiting for an experienced Sous Chef for The Malton, Killarney.

Key Responsibilities:

  • Work alongside the Executive Head Chef to ensure the smooth running of the kitchen/banqueting kitchen
  • Deputise in the Executive Head Chef`s absence.
  • Ensure that all Chefs are familiar with the day`s requirements.
  • Ensure that the necessary stocks are on hand at the right quantity and quality.
  • Ensure that all statutory, as well as company, hygiene regulations are strictly adhered to.
  • Deliver the highest standards of food and service at all times.
  • Make sure the hygiene and food safety standards are met in all stages of food preparation, starting with the ingredients and ending with the finished dish which leaves the kitchen.
  • Ability to control a fast paced high volume kitchen/banqueting kitchen
  • Ensure that all dishes leaving the kitchen are prepared to the approved standard of presentation

  • Minimum of three years experience as a Sous Chef
  • High standards of quality and consistency
  • Attention to detail, excellent presentation skills
  • Enthusiasm and creative talent
  • Passionate approach to the production of food
  • Flair and imagination
  • Management and organisational skills
  • Fully aware and compliant in Food Safety and HACCP Food Management Systems
  • Motivating manner and the ability to lead
